Campfire Hotpot

A Warming Meal For the Whole Group to Enjoy!

Campfire Hot Pot

Serves 4-6 people
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients

  • 10-12 saugsages of your choice
  • 1 tbsp vegetable or olive oil
  • 1 onion, sliced
  • 1 peper, sliced
  • 2 cloves of garlic, crushed
  • 1 1/2 tbsp harissa paste
  • 250ml real ale
  • 400g tin of chopped tomatoes
  • 400g tin of cannelloni beans
  • 200g of rice (brown or basmati is best)
  • 100ml cool water
  • Fresh coriander, chopped
  • Salt & pepper, to taste

Equipment Required

  • Scissors/sharp knife
  • Minimum 3.2ltr cooking pot/deep frying pan with a lid
  • Wooden spoon/stirer

Recipe Instructions

  1. In the pan, cut the sausages into four using scissors and fry in the oil for 5 minutes.
  2. Add the onion and pepper and continue to cook until browned.
  3. Add the garlic, harissa paste ale; simmer for 2 – 3 minutes before adding the tomatoes and cannellini beans, simmer over a high heat for 5 more minutes.
  4. Stir in the rice and add the water. Bring to the boil briefly, before covering and leaving to simmer for 8-10 minutes until the rice has absorbed most of the water.
  5. Season well, sprinkle with coriander and serve.
